AGM Update and Cracker Jack Cookie Recipe
May 02, 2016
We were pleasantly suprised by the increased number of attendees to the Annual General Meeting held last thursday at the Boundary Museum. Once the AGM Minutes have been completed we will be putting this on our website under 'News & Notices - Board Meetings'.
Dan's report on the complexities of maintaining our water system provided an awareness to many landowners about our ageing infrastructure as something to consider in the near future in terms of future costs for upgrades and/or replacements of various components.
Two trustees' terms were up this year and nominations were taken from the floor resulting in a ballot vote.
The successful nominees are Brent Heric and Alex Padmoroff. We look forward to working with them for the next 3 years.
We would like to thank Cher Wyers for the wonderful job she did in setting up the Meeting Room and providing refreshments/cookies. There were a few requests for cookie recipes with the Cracker Jack Cookie selected as the 2016 SION AGM Favourite - thank you Laura for allowing us to provide your recipe below.
CRACKER JACK COOKIES - Laura Lodder
- 1 Cup Margarine
- 1 Cup White Sugar
- 1 Cup Brown Sugar
- 2 Eggs
- 2 Tsp Vanilla
- 1 1/2 Cups Flour
- 1 Tsp Baking Powder
- 1 Tsp Baking Soda
- 1/2 Cup Walnuts (or nut of choice - peanuts taste great!)
- 2 Cups Oatmeal
- 1 Cup Coconut (long preferred)
- 2 Cups Rice Krispies
Combine all of the ingredients except the Rice Krispies and use a blender to mix. Once mixed, fold the Rice Krispies into the wet mixture. Place on a cookie sheet using a spoon. Bake at 350 degrees for 10 or 12 minutes or may need a few minutes longer depending on oven performance. For softer chewier cookies bake for about 8 minutes.
